Dutch Baby Pancakes

INGREDIENTS

  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • large eggs
  • tablespoons granulated sugar
  • teaspoon vanilla extract
  • 1/2 teaspoon fine salt
  • Instructions
  • 1.) Heat oven to 425.
  • 2.) Mix flour, milk, eggs, sugar, vanilla and salt in a bowl.

  • 3.) 
     Leave the batter I and set aside to rest 20 to 25 minutes. 
  • 4.) Pour batter into a 12 cup muffin tin.
  • 5.) Bake for 15-20 minutes until puffed.
  • Serve with syrup or powdered sugar.

Turkey Crepes

Thanks to neighbor Pat for this idea to use up leftover turkey. 





Crepe Batter:
2/3 cup flour; 1/4 tsp salt; 1 tbsp sugar; 4 beaten eggs; 1 1/2 c milk; 2 tbsp melted butter.
Sift dry ingredients. Combine eggs with milk, gradually beat into dry ingredients until batter is smooth.   Stir in butter Chill batter 2 hrs.  Brush a small heavy fry pan with butter and heat until a drop of water sizzles.  Pour a small amount of batter (2-3 tbsp.) into pan and tilt pan to form a very thin layer on bottom.  Cook over medium heat until lightly browned on one side.  Turn and brown other side.  Repeat until all batter is used.

Cheese sauce:
2 tbsp butter; 2 tbsp flour; 1/2 tsp salt; 1/2 tsp dry mustard; dash paprika; dash cayenne; 1 1/4 c milk; 3/4 to 1 cup grated cheddar cheese.
Melt butter, blend in flour and seasonings.  Gradually add milk. Stir and cook until smooth and thick.  add cheese and stir until melted.

Turkey Filling:
1/4 c. finely chopped onion; 1/4 c. finely copped celery; 2 tbsp butter; 1/2 c. chopped mushrooms; 2 c. finely diced cooked turkey; 2 tbsp chopped almonds; 1/4 tsp salt; dash of pepper.
Saute onion and celery in butter until onion is transparent.  Add mushrooms and cook 1-2 min. longer; add turkey, almonds, seasonings and 1/2 cu. of cheese sauce.  Place a spoonful of filling on each crepe and stack or roll.  Place crepes in a greased baking dish, brush with a little melted butter and bake at 400F until heated (about 10 min.)  Pour remaining cheese sauce over crepes when serving .

Makes 12 crepes.

Apple Raisin Pancakes

Summer Camp chez Grandmaman Morning Pancakes

2 cups flour
2 tbsp. sugar
2-1/2 tsp. baking powder
2 tsp. cinnamon
1-3/4 cups  milk
1/2 c. egg substitute
1/4 c. melted butter
3/4 c. pared, chopped apple
3/4 cup raisins

Combine dry ingredients. Beat together milk, egg and melted butter; stir into dry ingredients.  Stir in apple and raisins.  Cook on a lightly greased griddle over medium high heat, using 1/4 cup batter for each pancake.  Makes about 15 4 inch pancakes.

Baked Apple Pancakes

Last Sunday, we went as a family of four to pick apples.  Out of the many varieties that the farm grows here in Upstate New York, we chose the Empire, for it's crispness.  None of us here like the overly sticky, mushy apple.  With over nine pounds of apples that our toddler picked off the trees, we had to come up with something different to make.  Although, after a week of munching on the apples, remember 9 pds, we only had THREE left.  Amazing, but true.  My big little and my hubby snacked the week away in fresh crispy apples!



This morning we made some Baked Apple Pancakes, adapted from The Company's Coming by Jean Pare Series.  It was surprisingly yummy and easy, even with my big little "tap, taping" the eggs and mixing.  A couple of extra minutes in the oven wouldn't have hurt either, but we were hungry!

For the apple part:
2 tbsp butter
2 apples, thinly sliced, no need to remove peel
3 tbsp sugar
1/4 tsp ground cinnamon (we used more!)

For the batter:
3 large eggs
3/4 cup milk
3/4 cup flour
2 tsp sugar
1/4 tsp salt

In microwave melt butter in a 9x9 inch pan.  Tilt pan to cover edges and bottom with melted butter.  Lay apple slices in pan.  Sprinkle with first amt of sugar and cinnamon.  Return to microwave and cook for about 1 min or until just starting to soften.
Beat eggs in bowl.  Add milk, flour, second amt of sugar and salt.  Beat well.  Pour over hot apples.  Bake in 450 degree oven for about 20 min until puffed and edges are browned.  Serves 4.
